Vegetable couscous with dates, vegan
Step 1:
Finely chop onion, garlic, walnuts and dates and stew them in a small amount of water with the barberries and lemon juice. Season with the spices according to taste. Cut the vegetables into small pieces, put them into a pot or work, and braise them with olive oil and water if needed. Stir in the marinade and if required add more seasoning.
Step 2:
Prepare couscous according to cooking instructions and serve together with the dates and vegetables.
Ingredients
- Organic couscous
- 3 carrots, 2 courgettes, 1 paprika mix yellow, red and green 3 tomatoes
- A handful of organic dates and walnuts according to size and preference
- A few organic barberries if preferred
- Onion, organic garlic, lemon juice, parsley curcuma, coriander, chili flakes, salt, pepper, cinnamon
- Organic olive oil
