This ancient variety is used like a cereal – however, it’s not a real cereal, but a so-called pseudo cereal. Buckwheat contains no gluten, and can be part of a low-gluten and gluten free diet, if it is tested first for gluten!

We purchase our organic buckwheat, which we use for our flour, exclusively from Austrian organic farmers. The organic buckwheat is cultivated and harvested with the greatest care, in compliance with criteria on organic agriculture. It’s easy to see why Austrian buckwheat has so much to offer you! After harvesting, our organic buckwheat grains are cleaned several times, ensuring high purity. After their quality has been checked several times, the buckwheat grains are ground in a gluten free facility. The buckwheat flour is given our standard pressure treatment and they are laser cleaned. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests.

We recommend our gluten free buckwheat flour on its own for baking, or mixed with other gluten free flours, for example, rice flour. For the latter, choose a flour with a neutral taste, otherwise the characteristically nutty buckwheat taste will be less noticeable.
