Elmira´s mountain lentil and mung bean stew

Step 1:

Wash the mountain lentils and organic Fairtrade mung beans thoroughly, then soak them in lukewarm water for 2-8 hours. The longer the lentils/beans are soaked, the easier they are to digest. After soaking, rinse both ingredients and throw away the soaking water.


Step 2:

Peel the carrots and cut them into thin crescent shaped slices. Finely dice the organic onions, cut the organic spring onions into small pieces and finely chop the organic garlic.


Step 3:

Sauté the onions, garlic and carrots in oil on ¾ heat – level 7 of 10 or 3 of 4, stirring continuously.


Step 4:

Add organic Fairtrade curry mix, organic Fairtrade ground coriander, organic Fairtrade cumin, Fairtrade curry leaves (finely chopped), salt and pepper (according to taste), and stir for 2 minutes.


Step 5:

Add organic Fairtrade curry mix, organic Fairtrade ground coriander, organic Fairtrade cumin, Fairtrade curry leaves (finely chopped), salt and pepper (according to taste), and stir for 2 minutes.


Step 6:

Garnish with caramelised organic cherry tomatoes, chopped fresh organic herbs (coriander, parsley dill weed etc.) or organic beansprouts. Serve hot.

  • 1 packet of Bio-Leben organic Austrian mountain lentils
  • 1 packet Pearls of Samarkand organic Fairtrade mung beans
  • 2 organic carrots
  • 1 small organic onion, 1 organic spring onion
  • 2 organic cloves of garlic
  • 3 tbsp. Pearls of Samarkand Fairtrade organic olive oil
  • 1 tsp. organic Fairtrade curry mix
  • ½ tsp. organic Fairtrade coriander
  • 1 pinch of organic Fairtrade ground caraway and cumin
  • 4 organic Fairtrade curry leaves
  • 2 large organic tomatoes
