Dried raisins contain the same nutrients as fresh grapes, only in a more concentrated form.
Raisins contain antioxidants, among other things. These prevent unwanted oxidation in our body. They are therefore also referred to as radial catchers. Their contribution slows down the aging process of the cells and a number of diseases can be reduced [1 and 3].
The amino acids contained in raisins, above all valine, threonine, lysine, leucine and histidine [1 and 2], are just as interesting.
Raisins contain a very high antioxidant capacity of up to 10450 µmol TE (ORAC value = Oxygen Radical Absorption Capacity).
By consuming foods rich in antioxidants, the body's defense mechanism can be strengthened and an overproduction of free radicals can be balanced out. An ORAC daily requirement of between 5000 and 7000 is recommended .
Khorog (Chorugh) is one of the oldest cities in Central Asia, dating from the fourth or fifth century AD. It was an important traffic junction on the (southern) Silk Road, over which goods traffic from east to west and back went for centuries. Thanks to the eventful history of this city, the tastiest type of raisin in the country was named GREEN KHOROG, which means green KHOROG raisin.
The organic Fairtrade Khorog raisins are light green, almost bright raisins. Occasional raisins are light brown to greenish brown. The intense green color is retained thanks to gentle drying in the shade. The size is normal and they do not contain any pips. The pulp and skin are very soft. The taste is intensely sweet and fruity.
Origin and manufacture:
We source our organic Fairtrade Green Khorog raisins exclusively from Uzbekistan. The area is largely organic and FAIRTRADE certified and is cultivated by the FAIRTRADE farmers who live there. The farmers belong to a large Fairtrade community, which consists of 3 groups, Dustkul Bogi, Turkiston Gulba and Turob Bobo. Around 1000 individual farmers and their families belong to them. Thanks to the cooperation with Fairtrade, the farmers can offer their families a secure income and their children a new perspective.
After the harvest, the green Khorog raisins are washed and then gently dried in the shade with the help of the sun. The drying process used is a very environmentally friendly solar drying method that is extremely gentle on the product.
In Austria, the Green Khorog are pressure treated and laser cleaned. With pressure removal, the interaction of pressure and time ensures absolute freedom from pests. During the subsequent multiple cleaning in the laser cleaning system, the organic raisins are checked individually in order to rule out any foreign contamination.
